32-bit Kinetis MCUs represent the most scalable portfolio of ARM® Cortex™-M4 MCUs in the industry
New 16-bit MCU family combines low power technology, low price, and low pin count packages
Atmel’s Embedded MPUs are optimized for reduced system cost in industrial applications
I would say ARM7 is a good platform to learn about ARM microprocessors. There have been many updates overtime to the ARM architecture, but if you can learn to develop with an ARM7 you should be able to develop with other ARM or Cortex platforms.
Here is a list of the progression of the ARM architecture.
